Mahjeb is one of the oldest purely Algerian dishes that is still prepared today. It is an Algerian dish consisting of flour and semolina dough stuffed with cooked vegetables and thinned with olive oil. It has many names, the most famous of which is Mahjeb or Mahjouba. In southern Algeria, it is called Makhtouma, and the fillings vary from one state to another.
